Quick & Healthy Meal: Vegan Lemony Pasta

Spaghetti - 8 oz package
Trazza Foods' Zesty Lemon Hummus - One 9oz container
Olive Oil - 1 Tablespoon
Shallot - 1 large, finely chopped
Capers - 2 Tablespoons, drained and rinsed under cold water
Pasta Cooking Water - One cup


Cook pasta according to package instructions.
While pasta is cooking, sauté shallot and capers with olive oil in a large pan.
Add Trazza Foods' Zesty Lemon Hummus to pan and stir well until a creamy texture is achieved, adding some of the pasta water as needed.
Add drained cooked pasta, stir well, and serve.
Top with lemon zest and parsley.
